Well I made Tamales today. I was hoping to be able to report how great they turned out and share my recipe. Unfortunately they turned out so-so . However I can say I learned a bit about tamale making and I vow to try again in the future.
The main thing I learned is that you cannot over estimate how bland masa and corn meal are. So your filling needs to be well seasoned to counter act that blandness. Oh well… it’s not like they were inedible just very, very, very bland.

Definitely agree that to be flavorful (and likely spicy) is better than bland.
Though, with them, being bland you can spice them up individually to taste.
If you had some tomatillos you could have whipped up a quick salsa verde to put over them.
